Fried rice is every Asian household’s go-to meal, the economical dish that is easily adaptable to anybody’s taste. Today, I made garlic fried rice as lunch packs for my family of four, and it only cost me RM5 to feed all four! All you’ll need are:
1. 4 portions of cooked rice
2. two beaten eggs
3. chopped garlic (amount according to preference)
4. salt and pepper to season
5. soya sauce
6. fishcakes (this was just my bonus addition, not required)
Garlic fried rice tastes good on its own, but since I found some rectangular fishcakes (a pack of 3 for RM2.50) left from a previous meal, I sliced one piece up and started by frying those in a frying pan. Then I fried about 3 spoons of chopped garlic in a wok. Once the garlic started turning brown, I threw my cooked rice and sliced fishcakes into the wok, poured the beaten eggs in, and seasoned everything with salt, pepper, as well as soya sauce to taste, constantly tossing the rice in the process to ensure a balanced mix of flavors. When the eggs settled into a nice solid texture, I stopped frying and starting serving the eager family.
This super easy and cheap meal can be elevated with a side of stir fried vegetables or topped with a fried egg, which will still bring you to a total of RM5 for a serving of four. The best part about fried rice is that it tastes even better overnight, and you can con the kids into eating their veggies by finely chopping some and mixing them in *insert evil grin*.
