As a mom of two, it’s always my top priority to eat healthy while sticking to a very tight budget. Eating out has become a very pricey option, therefore most of our meals are made from home. As part of my challenge in partaking in UNICEF’s Below The Line movement, I’ll be posting up a recipe each day that will share just how I stick to a RM5 per meal per person budget (as mentioned in our previous post about the cause, the currency different between a pound and a Ringgit would be too vast to compare, therefore we decided on RM5 as the targeted budget per meal), and how I do it with the ease of a mom who barely has any time to cook!
In this post, I’m going to share with you a simple chicken and parmesan wrap recipe that can be enjoyed by both adults and kids. The ingredients required (but not constrained to) are:
1. chicken breast
2. parmesan
3. wraps
4. lettuce
5. mayonnaise
My grocery cart always consists of a varied few indulgent purchases mixed with plenty of cost efficient products. Two of my favorite splurges are cheese, and Heinz’s Light Mayonnaise. While their individual price tags are hefty at first (both costing around RM10 and above), these are ingredients to many recipes and are constantly on rotation, and they normally last me a little over a month. My favorite affordable food product to create with would be wraps (RM5 below for a pack of 8).
Anyway, back to lunch! I boiled a full portion of skinless breast meat (RM6 for a market pack which makes up to three wraps) in salted water for a good 20minutes. I also prepared some lettuce leaves onto my wrap.
Once the chicken is ready, just stack all the components up into the middle of the wrap, and spread some mayo on the stack. Roll both sides of the wrap towards the middle, stick a toothpick into it, and pop it into a toaster oven or onto a frying pan to melt the cheese. You can serve as a whole roll, or cut into two handy pieces for sharing. I made three portions to share among our team at Gin & Jacqie, and the total amount for three was below RM15 when the ingredients were divided per serving, keeping me #belowtheline. The best part about wraps is that you can use fill them with basic food products found in your fridge, mine being lettuce, chicken, and cheese
