Potatoes are one of my ultimate favorite ingredients to have at home. They’re affordable, easy to obtain, and one of the most versatile ingredients to work with. A bag of 6-7 potatoes costs about RM4.90, and lasts a few meals. This recipe only requires two potatoes to feed two people, and is so simple to make that you’d kick yourself for paying RM15 at Marche for rosti!
You only need two potatoes and some seasonings. To start, skin your raw potatoes, and then shred them into thin, long pieces. Since I don’t own a vegetable shredder, I just used my hand peeler, which creates the same result albeit a little wider in width. After all, we’re not all equipped with a Jamie Oliver kind of kitchen ;p
Once you’ve shredded the potatoes, squeeze the water out of them and then sprinkle some salt as well as a dash of soya sauce into the pile. Mix and massage the seasonings through with your hands, and squeeze the liquid out again. Heat up a small frying pan, and melt about two tablespoons of butter or oil into it. Then place the pile of shredded potatoes into the middle of the pan, and just use a spatula to slowly flatten it towards the edges of the pan.
Don’t worry about whether or not the pieces will stick together, they will as long as you let the shape maintain and keep flattening as you go along. Find a plate that’s big enough to fit the size of the pan. Once the bottom has turned a nice, crisp brown, flip your rosti around by placing the plate facedown against the pan and turning the plan and plate over. This will ensure a clean flip.
You can melt a little more butter to keep the potatoes from burning before putting the rosti back onto the pan. Wait for the other side to turn the same crispy brown, and then plate by using the same flipping method.
You can serve this on its own, or indulge by partnering it with some sausages or bacon. Since I had some in the fridge, I topped mine with a sprinkle of parmesan cheese and a dollop of sour cream.
